Marcus Junkelmann's book comes to mind:

"Panis Militaris: Die Ernährung des Römischen Soldaten oder der Grundstoff der Macht"
ISBN 3805323328. Hardback. Price GB £29.50

Since the Roman army made a lot of tiles and other ceramics, other books on, for example, Romano-British pottery might be applicable.
Look for books under the subject "Mediterranean Pottery".
