Matt Lukes in Canada has made some real schnazzy parts for a Signa...We're hoping to have ours all assembled soon!
Leg III Cyr has a hand embroidered Vexillum based on the (only) known Vex from Egypt - there's a picture on our front page on our website.
Another Leg III Cyr member has made some new Vex's for the group as well.
Off the top of my head, I know Leg XX http://www.larp.com/legioxx/signum.html has made thier Vex and Signa, and also have some notes about them.
Leg XXIV http://www.legionxxiv.org/signum also has a Vexillum, Signa, as well as an Aquila, Draco and a Bull standard.
Leg XXX in Canada - http://www.geocities.com/legioxxxcoh1/ I believe made thier own Aquila using a Bronze cast Eagle sculpture they scored off of eBay, and made thier own base, shaft and funiture. I *think* it was Magnus who mentioned a while ago searching for "Napoleonic" bronze eagles as well.
