I think here it is worth remembering that previous to Marius, the soldiers were permitted their own carts and baggage animals. Kit such as greaves would probably have been carried on these. After Marius they may have been one of the first items to get left out once the soldier had to march all day without his own baggage animal.

Incidentally, concerning the carriage of helmets, both the ancient depictions I am aware of (Trajan's column and one of the Mainz column bases) show the helmet being suspended somehow from the shoulder, rather than the chest.
