The real any army isn't going to look like it's protrayed in a movie. All the men cast in the roles of legionaries were cast because they looked like legionaries, but I can tell you from my time in the US Army that not everyone looks the part of a soldier.
Julius Caesar hardly looked like a soldier, certainly not like a man who would've conquered Gaul. Neither did Napoleon Bonaparte for that matter.
For a movie to be successful, the people have to look the part. For an army to be successful, the people have to be the part, regardless of what they look like.
Now, all that being said, I have plenty of gripes about re-enactors not keeping themselves "up" from a historical perspective for the roles they're going to play. I think your point, WoadWarrior, is more to the "cheesy" point than a soldier's physical condition.
