Ancient middle eastern and asian milk and yoghurt

While doing some research for ancient Roman and middle eastern and asian drinks I came across the subject of milk and yoghurt. I understand the Greeks made yoghurt about the same way my mother used to do it when I was young (30/35 years ago) that is by using a constant fermentation proces using kefir grains.
This kind of yoghurt I also encountered while reading about the Scythians.

And the Roman writer Apicius mentioned mixing yoghurt with zalt. Doing so one would create something that looks like a drink nowadays known by it's Turkish name Ayran.

My question is:
1) does anyone know more about more ancient drinks like Kefir Yoghurt?
2) does anyone know more about more ancient drinks like Ayran Yoghurt?
