You don't say which part of Scotland you'll be visiting, but I assume the central belt.
We cannot boast spectacular stone ruins, and many of the best-preserved earthworks are far from the beaten track.
But if you are in Glasgow/Edinburgh (and it sounds as if you will be), Rough Castle (near the village of Bonnybridge) on the Antonine Wall is worth a visit -- the circuit of ramparts can still be seen, and the impressive series of ditches, not to mention the massive Antonine ditch itself. Also, this is one of the few sites where you can see a patch of 'lilies', such as Caesar describes at Alesia.
If you are feeling energetic, the hike up to Bar Hill (from the village of Twechar) gives spectacular views (rain permitting!) along the frontier. The foundations of the HQ building have been consolidated and, further down the hill, the rather modest bathhouse, too.
If you have the opportunity to motor north, the fort at Ardoch (near the village of Braco) is probably the best preserved Roman fort in Scotland. In Scottish terms, this essentially means a flat area of grassed land (the fort platform, where you must envisage the bustling garrison life, because the remains won't help you!) within a rampart circuit (surviving as a 1.5m high grassy banking) and a sequence of multiple defensive ditches, here surviving to a depth of 2m.
A decent map is essential to find these sites, and some prior reading on Ardoch is advisable (although Rough Castle and Bar Hill have story-boards on site).
