Ave Civitas,

Am I correct in assuming that the provinces of Septem Provinciae would have been under the defensive umbrella of the Magister Equitum per Gallica?

Yes, the commands of the Magistri seem to have mirrored the regional prefectures. Septem Provinciae was one of the three dioceses comprising (along with Hispaniae and Britanniae) the prefecture of Gaul, under the Praefectus Praetorio Galliarum, and its military affairs were normally conducted by the Magister Equitum per Gallias.

As we see in some instances, though (especially in the chaotic 5th century) it was the Magistri in praesenti who led major campaigns in Gaul, as elsewhere.
