Impressive! What is the notch in the blade for ? (Hopefully not a Roman beer bottle opener? )

Hello!
Simancas knifes were mostly for cinegetic (hunting) use, not for war. And, as Faventianus notes, the notch is for place a finger. The knife have a very little guard. It's very little, 20 cm or so the whole thing.

Is the shape related at all to this scabbard from (IIRC) the Numantine Museum in Spain?

Yes it is. There are a lot of exemplars, someones with opus interrasile decoration (like the photo ones), some plainer.
Aitor Iriarte have a very beautiful reproduction of one of the more decorated versions.
