Mike,
I assume you refer to the "gorgonio". It is supposed to reperesent the severed head of the demoness Gorgo who according to legent was petrifing people.
It was used as a unit emblem on one city state and as heraldry for a couple of Archaic clans and posibly one elite late classical hoplite unit.

Have a look at the "hoplite shield devices" thread if you please.
