The only other way would be to run the blade lengthways along the blade using someting likeTHIS with a flat table on top with the stone just protruding through, and basically turning it into a surface grinder but it would be a slow job. I hope you can understand

Actually, running the blades lengthwise down our grinders (with the rests, platens and such removed) is exactly what we do at the shop. If you check out this youtube video you can see at the 1:47 mark how we grind flat surfaces. In the background, I think you can see one of our guys grinding out a fuller on a two-inch diameter wheel, running the blade sideways.
