Actually, running the blades lengthwise down our grinders (with the rests, platens and such removed) is exactly what we do at the shop. If you check out this youtube video you can see at the 1:47 mark how we grind flat surfaces. In the background, I think you can see one of our guys grinding out a fuller on a two-inch diameter wheel, running the blade sideways.
