Ambushes with Arcani and Praetorian Cavalry against Gauls. Hide all units in a corner of the map, with your general behind. He can't hide, so all enemies will go and attack him. Then your Arcani come to action. When they are fighting, charge with your Praetorian Cavalry. Smile

I have one that works wonders for me. When holding cities, unless the enemy are using few ladders/siegetowers/onagers/whatever, pull back, and hold the streets leading into the town square. I've held vastly superior foes away with auxillia troops. Just keep the general near the point of the fiercest fighting, and if you have them, keep onagers and missile troops in close attendance whenever possible. The Greeks and other factions with phalanges are extremely well adapted to this tactic.
